Who would have ever thought Brussel sprouts would make such a comeback? They've had a bad rap for years but can be truly delicious if prepared by sauteeing or roasting them. This recipe from Pinch My Salt was fabulous and makes an excellent side dish to beef or pork. Casey and I both loved it!
Ingredients:
2 tablespoons cider vinegar
1 tablespoon brown sugar
1 tablespoon walnut oil (or oil of your choice, or apple cider)
4 slices thick cut bacon
1 pound brussels sprouts, trimmed and shredded (you can use the shredding blade on a food processor)
1/2 cup toasted chopped walnuts
kosher salt, to taste
fresh ground black pepper, to taste
Directions:
In a small bowl, whisk together vinegar, sugar, and oil; set aside.
In a large skillet, cook bacon until crisp. Remove bacon, cut or crumble into pieces, and set aside. Pour off all but 2 tablespoons of drippings in pan (if there aren’t enough drippings to equal 2 tbsp, add a little butter or oil).
Heat drippings over medium-high then add shredded brussels sprouts. Cook, stirring constantly, for 3 to 5 minutes, or until just tender. Remove from heat and stir in bacon, walnuts, and dressing. Season with salt and pepper to taste. Serve warm.

Oh if only my husband would like brussel sprouts. I love them, bacon or not! Only kidding! Seriously though I made them for him one time and he was not much for it but maybe i will try again with your recipe!Thanks!
I have never tried brussels sprouts-only because I think they might be awful, but these look really good so maybe I should give them a try! anne

Yum, my family doesn't care much for brussel sprouts on their own, but they love them when made with bacon.
I'm a brussel sprout roaster by nature but this recipe looks awesome. I'll have to give it a try.

I **adore** Brussels sprouts! So thank you for sharing this recipe... can't wait to add it to my repertoire. My recent favorite (Brussels sauteed in walnut oil with toasted pecans) was from our Thanksgiving dinner... super yummy too!

I've NEVER eaten brussel sprouts because of that bad wrap you're talking about! But they keep popping up on blogs. Hmm...I think I'll try them. This recipe looks great.

Okay. I hate brussel sprouts and have NEVER tasted a recipe that could enable me to actually finish my serving. But I know they're good for me, so I decided anything w/ bacon can't be bad, right? I was right! I won't say I love them, but at least I now know that there is a way I can eat sprouts. Thank you! :)
