Amanda's Chicken and Veggie Stir Fry

My best friend, Amanda, came over the other night to cook dinner for us. She made up a chicken and veggie stir fry concoction that she wanted me to try and it was super delicious. I don't have exact measurements for everything but this is easy to make just by adding as much as you need of each ingredient. The end result, served over jasmine rice, was a great and satisfying meal!


Ingredients:
3-4 uncooked chicken breasts, diced
2 heads of broccoli, cut into florets
4 celery stalks, sliced
1 large zucchini, sliced
1 large onion, sliced
1 package sliced mushrooms
1 package bean sprouts
Cilantro, roughly chopped
Cooking oil (like canola or safflower)
Rice vinegar
Sesame chili oil
Sweet chili sauce
Salt
Jasmine rice

Directions:
Heat cooking oil in a large wok or fry pan. Add diced chicken and saute until slightly cooked and no longer pink on the outside. Add broccoli, celery, zucchini, and onion. Add rice vinegar (roughly 1 tbsp) and sesame chili oil (roughly 1 teaspoon), to taste.


Cover and allow vegetables to cook down for 5-10 minutes, adding more oil as needed.


Add mushrooms, bean sprouts, and cilantro, stirring to combine. Cook for another 1-2 minutes.


Turn off heat and allow to cool slightly. Add sweet chili sauce and salt to taste.


Serve over jasmine rice. Top with additional sweet chili sauce or soy sauce, as desired.

Update

Oh man have I been slacking on blogging this month. I've been busy. I took a photography class, got back into yoga, and just been enjoying the summer. I plan to catch up with Project 365 by the end of the month but things might be a little quiet around here for the rest of June. Hopefully in July I will have two completed renovations to show you. Here is a little sneak peak...

Casey has built a fabulous deck! No stairs yet but the important (and usable) part is done. There will be two sets of stairs in between planters for flowers and plants. The old brick down below will be replaced by flagstone. At some point the fence will be replaced. Annnnd.... Casey has promised to make a spot to hang a hammock! Score!



Our other project has been on hiatus for awhile but we are pushing to get it done by mid-July. It's the guest bedroom renovation. So far we have removed the wall sconces and closet doors, prepped and primed the walls and ceiling, and started laying down the Pergo floors. After doing the floors we will paint the walls and ceiling, add base board moulding, install new closet systems and new closet doors and install a new hallway door. Also, we are getting new windows (yippee!) so this window will be replaced.

Chicken and Ziti Casserole

This is a bridal shower recipe from my wonderful mother in law. She says it was Casey's favorite growing up and I think it still is. He loved it, I loved it, and it was super easy to boot. This one will definitely be staying in the family.
Ingredients:
1 (30oz) jar of your favorite pasta sauce
4 cups cooked ziti
1 1/2 cups cooked chicken, shredded or diced
1 cup shredded mozzarella, divided
1 tbsp Parmesan cheese, grated

Directions:
Preheat the oven to 350.

In a 2 quart casserole dish, stir together pasta sauce, ziti, chicken, and 1/2 cup mozzarella until ingredients are incorporated. Top mixture with remaining mozzarella cheese and grated Parmesan cheese.

Bake for 30 minutes or until hot and bubbly.

Servings: 6

Notes:
  • I coated the chicken with Italian chicken seasoning and sauteed it in a bit of olive oil, then shredded.
  • At Cyndi's recommendation, I added extra sauce since Casey and I like our pasta to be extra saucy.

Project 365: Week 21

These are a week behind! I need to catch up this weekend. These pictures were taken at a FIF BBQ. 4 couples and 7 dogs! It was a fabulous time for both humans and dogs.

My good friend Kelly's littlest pup, Holly, has since been sick and in and out of the hospital. Please keep Holly in your thoughts!

Goat Cheese Stuffed Mushrooms

This bridal shower recipe was given to me by my best friend, Amanda. When we used to be roomates, we made another version of goat cheese stuffed mushrooms everytime we had a party. It was one of the first recipes I "mastered". I hate to say that this version, although good, was not quite as tasty as the one we used to make. One of these days I will find the original recipe and make it for old times sake!


Ingredients:
20 oz white button mushrooms, stems removed
Olive oil cooking spray
3 slices white sandwich bread
1 small garlic clove, coarsley chopped
5 oz. soft crumbled goat cheese
1/2 cup fresh parsley
1/4 tsp red pepper flakes
Coarse salt, to taste

Directions:
Preheat oven to 400. Lightly spray a rimmed baking sheet with cooking spray.

In a food processor, pulse bread and garlic until fine crumbs form; set 1/2 cup aside. To food processor, add goat cheese, parsley, and red pepper flakes. Season with salt and pulse filling until combined.

Spoon filling into each mushroom top and roll filled side in reserved breadcrumbs. Place on prepared baking sheet and bake until mushrooms are tender and lightly browned, 15 to 20 minutes.

Broiled Tilapia with Thai Coconut Curry Sauce

Another great recipe from Gina's Weight Watcher Recipes. This fish dish was simple to make. Use a food processor to chop up the ingredients. The sauce was delicious, spicy but not hot. I only made two fillets and saved the extra sauce to serve over rice for a quick meal. This would be great with jasmine rice but I didn't have any so I used wild rice instead.


Ingredients:
1 tsp dark sesame oil, divided
1 tbsp minced peeled fresh ginger
4 garlic cloves, minced
1 cup finely chopped red bell pepper
1 cup chopped scallions
1 tsp curry powder
2 tsp red curry paste
1/2 tsp ground cumin
4 tsp low-sodium soy sauce
1 tbsp brown sugar
2 tsp Asian fish sauce
1 (14-ounce) can light coconut milk
1/4 cup chopped fresh cilantro (can substitute basil if you prefer)
6 (6-ounce) tilapia fillets
Salt
Cooking spray

Directions:
Preheat broiler.

Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add ginger and garlic; cook 1 minute. Add pepper and scallions; cook 1 minute. Stir in curry powder, curry paste, and cumin; cook 1 minute. Add soy sauce, sugar, Asian fish sauce, and coconut milk; bring to a simmer (do not boil). Remove from heat; stir in cilantro (or basil).

Brush fish with 1/2 teaspoon oil; sprinkle with 1/4 teaspoon salt. Place fish on a baking sheet coated with cooking spray. Broil 7 minutes or until fish flakes easily when tested with a fork. Serve fish with sauce, rice, and lime wedges
