Buffalo Chicken Meatloaf

I stumbled across this recipe on the cooking blog Food alla Puttanesca and it looked too good to pass up. I love anything that tastes like Buffalo chicken, except for Buffalo wings because I am weird and don't like skin or bones near my food. So basically I am saying I like things with blue cheese and Frank's Red Hot Sauce.

Ingredients:
Cooking spray
2/3 cup old fashioned oats
1/3 cup fat free milk
1/3 cup hot sauce, plus more to sprinkle on top
1 lb extra-lean ground chicken breast
1/4 cup finely chopped celery
1/4 cup shredded carrot
1/4 cup finely chopped sweet onion
2 large egg whites, lightly beaten
1/4 teaspoon salt
1/2 cup crumbled reduced fat blue cheese

Directions:
Preheat oven to 350F. Lightly mist a 9” x 5” x 3” nonstick loaf pan with cooking spray.

Combine oats and milk in a medium size mixing bowl. Mix well. Let stand for 3 minutes or until oats are softened. Stir in hot sauce until well mixed. Add chicken, celery, carrots, onion, egg whites, and salt. With fork, mix ingredients well. Add blue cheese and gently mix.

Transfer mixture to pan and spread so that top is flat. Top with hot sauce and spread evenly. Bake 35 to 40 mins or until chicken is no longer pink. Cut into 8 slices.

Project 365: Week 7

I was in Vermont for the long weekend so I had some spare time to play around with my camera's manual settings. Mostly, I worked on creating a shallow depth of field with an open apeture (small f stop number) and manual focus.

I know the snowy dog pictures are getting a little old but all it has been doing lately is snowing. Like, two blizzards in a row.

Chili

I have never made chili before because I am not a big bean person. It's a texture thing. But, this year I tried a version based on recommendations from a few friends. It turned out really yummy, although perhaps more stew like than chili like.

Ingredients:
1 lb ground beef
2 large cans stewed tomatoes
1 small can tomato paste
1 small can sliced jalepenos, drained, plus a splash of the liquid
1 onion, chopped
1 clove garlic, minced
2 bay leaves
Worcestershire sauce, to taste
Chili powder, to taste
Cumin, to taste
Salt and pepper, to taste
1 can refried beans

Directions:
Brown the ground beef then place in crockpot. Cover with the rest of the ingredients except the refried beans. Cook on low for 6 hours. Add refried beans for the last 30 minute of cooking. Adjust spices to taste.

Serve with cheddar cheese and cornbread.

Cornbread

With all the snow that we've been getting lately, I thought I'd make chili an cornbread. I like sweet (but not too sweet) cornbread and this recipe was perfect.

Ingredients:
1/2 cup butter
2/3 cup white sugar (I used slightly less)
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt

Directions:
Preheat oven to 375. Grease an 8 inch square pan.

Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.

Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
