Ultimate BLTs

I was recently inspired by this post from Joy the Baker to make BLTs. This is a sandwich that I haven't had in ages and always seemed kind of bland or just not completely satisfying. Well, I have learned that it was what type of ingredients I was using to make my BLTs that was the problem. For a true BLT you have to use the best bacon, and the best tomatoes, and put a little love (and bacon grease) in there too. This will give you the ultimate BLT. Warning: not calorie free. But worth the extra run it'll take you to burn it off!

Sorry for the poor quality pictures, I think I was too excited to eat the glorious BLT to pay much attention to things like camera settings and focus.


Ingredients:
Good quality bread (this is the only thing that I was missing, I just had regular old sandwich bread, still turned out great!)
The best bacon you can find. We found some amazing bacon at Pete's Greens in Craftsbury, VT.
Heirloom tomatoes (a $4 tomato is totally worth it here). Great tomatoes also found at Pete's Greens. I love that place.
Romaine lettuce
Mayonnaise. I used my favorite Lemonaise from the Ojai Cook.

Directions:
Fry up the bacon. Now listen up, this next step is important. Fry the bread in the bacon grease. Yes, seriously. You won't regret it. Slice up the tomato in nice, thick slices. Spread the mayo on the bread, and top with lettuce, tomato and bacon. Eat it and weep. Then promise yourself you will run an extra mile tomorrow.

Mmmm...I heart BLTs! If you like avocados, try adding a couple of slices. Yum!

Mmm... I don't buy bacon often, but now I crave it... good tomatoes make a big difference in sandwiches I think... they can make or break the taste and texture in my opinion...

That use to be my FAVORITE Easy-to-make sandwich. But my health-conscience internal voice wont let me enjoy it any more :(
I may have to turn that voice off for a little while because my mouth is now watering for that sandwich...shame on you!
