I love quick and easy crockpot recipes. This one turned out fabulous. It reminds me of Salsa Chicken, another crockpot favorite. I found this recipe on Magnolias, Marriage and Manhattan.
Ingredients:
4-5 chicken breasts
2 cans of rinsed and drained black beans
4 oz reduced fat cream cheese
2 cups salsa
Spice Options: taco seasoning, chili pepper, garlic powder, crushed red peppers, to taste
Directions:
Place chicken in crock pot and cover with beans and salsa. Cook for 6-8 hours until chicken is falling apart. At the very end, stir in cream cheese until it melts. Serve over rice or with tortillas. Top with fresh tomatoes and cilantro (optional). We also served ours with a pickled pepper.
