This bridal shower recipe was given to me by my best friend, Amanda. When we used to be roomates, we made another version of goat cheese stuffed mushrooms everytime we had a party. It was one of the first recipes I "mastered". I hate to say that this version, although good, was not quite as tasty as the one we used to make. One of these days I will find the original recipe and make it for old times sake!
20 oz white button mushrooms, stems removed
Olive oil cooking spray3 slices white sandwich bread
1 small garlic clove, coarsley chopped
5 oz. soft crumbled goat cheese
1/2 cup fresh parsley
1/4 tsp red pepper flakes
Coarse salt, to taste
Directions:
Preheat oven to 400. Lightly spray a rimmed baking sheet with cooking spray.
In a food processor, pulse bread and garlic until fine crumbs form; set 1/2 cup aside. To food processor, add goat cheese, parsley, and red pepper flakes. Season with salt and pulse filling until combined.
Spoon filling into each mushroom top and roll filled side in reserved breadcrumbs. Place on prepared baking sheet and bake until mushrooms are tender and lightly browned, 15 to 20 minutes.

Yum Yum Yumminess. How I miss goat cheese. I think they sell it at a gourmet store here in Korea for about $20.00 for a small piece!
I will eat vicariously through you though!

Oh man, I would die without goat cheese. Seriously.
