Cilantro Lime Rice

Just like the rice at Chipotle. Yum! Another fabulous recipe from Gina.


Ingredients:
1 cup basmati rice
Juice of 1/2 lime
2 cups water
1 tsp salt
3 tbsp fresh cilantro, chopped
4 tsp vegetable oil, divided

Directions:
In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off flame and keep covered an additional 5 minute.
In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.
Servings: 4
Points Plus: 5 per serving

Yum - I am always look for a good Mexican rice to serve with tacos and such.

I made this tonight to go with your CrockPot Santa Fe Chicken recipe and the rice was SO. GOOD.! It's pretty much spot on for Chipotle's rice. I'll definitely be making this again. Oh! And, for some reason, I usually have a lot of trouble making rice, it's just the one thing I CANNOT make! But I followed the instructions as written and it turned out perfectly. DH was very pleased as he loves rice! Thanks for sharing the recipe!
