Restaurant Style Salsa

I wish I had taken a better or more interesting picture of this salsa. But, as it turned out, I could not waste another second before inhaling it. I practically lifted up the bowl and drank it. Seriously. I ran out of chips and only had those little tiny useless crumbs left but I made 'em work. Oh yes I did.

This is from the wonderful, amazing, Pioneer Woman. Who happens to be my BFF. She doesn't know it yet, but she is.

Ingredients:
1 can (28 oz) whole tomatoes with juice
2 cans (10 oz) Rotel (diced tomatoes and green chilies)
¼ cups chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin
¼ teaspoon sugar
¼ teaspoon salt
¼ teaspoon ground cumin
½ cups cilantro (or more to taste)
½ whole lime juice

Directions:
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like - about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

Notes:
I used one can original Rotel and one can spicy Rotel. The salsa came out with quite a kick. PW recommended using one can original and one can mild. That is probably better if you are serving this to anyone who doesn't like spice.

I also used extra cilantro. I tasted it and it needed something extra so I threw in another handful. Perfect. For the cilantro haters out there, you know not what you miss.

This makes a lot. I have a medium sized food processer. It's not huge but it's not tiny either. I barely could fit all the ingredients in it and there was some spillage.

2 cans (10 oz) Rotel (diced tomatoes and green chilies)
¼ cups chopped onion

¼ teaspoon ground cumin
½ cups cilantro (or more to taste)
½ whole lime juice
