Leftovers: Salsa Chicken Quesadillas

Quesadillas are a great quick and easy meal for us. I usually make them by grilling or boiling chicken breasts and then adding cheese and whatever else I can find in the tortilla before frying 'em up. We had leftovers from the Crockpot Salsa Chicken I made the other night so I decided to use them in a quesadilla.


Ingredients:
Salsa Chicken leftovers
Mexican shredded cheese, 2%
Whole wheat tortillas
Jalepenos, canned, sliced
Reduced fat sour cream
Salsa

Directions:
Place salsa chicken, and a generous helping of cheese on one half of a tortilla. Add jalepenos based on how much heat you want. Fold tortilla in half over contents. Melt a pat of butter over medium heat. Add folded tortilla and cook, flipping as needed.

Slice in half and serve with sour cream and salsa.
